I am making Kombucha. All I have right now is a dirty gallon jar and a dream. Can I do it? I think so. I have a neighbor who makes it. She gave me a baby scoby. Then she lost her mother scoby to fruit flys. So, good friend that I am, I gave her back her baby. She is growing a new mother from it.
What is a SCOBY? It is an acronym for Symbiotic Colony of Bacteria. You need one of those and you have to grow one from an existing one.
Today Tuesday 10/17/17 I bought a SCOBY on Amazon. I have no idea if it will be a good one or not. I’m prepared to experiment.The above (Affiliate Link) is what I bought. It should arrive on Thursday.
In the mean time, I have been researching about Kombucha. On one hand it seems simple. On the other it seems complicated. I know I’m not prepared for when it is finished. My friend has these nice bottles that she pours her Kombucha into. I don’t have any of that. I know I need a SCOBY and a jar and to brew tea. I can do that.
I heard that you can grow a SCOBY from a store bought raw unflavored Kombucha. I’m considering trying that out. I don’t live near any kind of health food store like Whole Foods or Healthy Living. I may take a drive out just to pick one up to experiment.

Wednesday 10/18/17 The SCOBY shipped. I bought two Kombuchas at the supermarket. We’ll see if those can grow a SCOBY.
Thursday 10/19/17 I got my Kombucha SCOBY in the mail today. You can see the nice thick SCOBY in the package. I will take a picture of it when I open it.
I also started growing a SCOBY from a store bought plain raw Kombucha tea. You can see that in the above picture.
Process: I boiled 7 cups of water. I added 1/2 cup of sugar and 4 tea bags. I let the tea steep until the tea was cool. When it was cool, I removed the tea bags and poured the tea into a sterile 1 gallon jar. I poured the store bought Kombucha into the jar. I covered the jar with a clean cloth napkin folded in 4ths. I will wait to see if a SCOBY grows. I’m pretty sure this will not make a drinkable Kombucha tea. It will just grow a good SCOBY for one.
I still have one Komucha from the store. I think I will just drink it.
I ran out of tea bags. I have to go get more before I can start the Kombucha from the SCOBY that came in the mail today. I will follow the instructions from the company it came from: http://fermentaholics.com/how-to-brew-kombucha-at-home/
10/20/17 I did get tea last night and I also realized that the instructions to brew the tea are on the back of the Kombucha starter package. That is convenient. I followed the instructions and now I wait.
I made many batches of Kombucha after this and they were all successful. I really enjoyed doing it but I was the only one in my house drinking it and I have a very small refrigerator. We are a family of 5 and we need all the space we can get. I stopped making Kombucha but I am so glad that I learned how to do it. I’m very happy that I can make a scoby from a store bought Kombucha too. That is a good skill to have.
